Choc-chip muffins

2½ cups self-raising flour
¾ cups caster (superfine) sugar
2 tablespoons margarine, melted
1 cup Nestlé Dark Choc Bits
310 ml (1¼ cups) skim milk
1 egg, lightly beaten
1 teaspoon vanilla essence

Preheat the oven to moderate (180°C or 350°F).  Lightly grease a 12 hole nonstick muffin pan.  Sift flours and cinnamon into a large bowl.  Stir in sugar and choc bits.  Make a well in the centre of the mixture.  Whisk the margarine, milk, egg and vanilla together with a fork, then add to the flour mixture.  Stir gently until the mixture is just combined; don't over beat or the muffins will be tough.  Spoon mixture into the prepared pan.  Bake for 20 minutes or until muffins are well risen and spring back to the touch.  Leave in the pan for a few minutes then lift out onto a wire rack to cool, or eat while still warm.
