Pumpkin & cinnamon muffins
1 1/2 cups self-raising flour
1 cup wholemeal self-raising flour
3/4 cup brown sugar
1/2 cup NESTLÉ White Choc Bits
1 tbs margarine, melted
1 cup skim milk
1 egg
1 tsp vanilla essence
2 ripe bananas, well mashed
Use 2 1/2 cups self-raising flour and omit wholemeal flour. Sift 2 teaspoons ground cinnamon and 1 teaspoon ground nutmeg with flour. Reduce brown sugar to 1/3 cup. Omit NESTLÉ White Choc Bits and vanilla essence. Replace bananas with 3/4 cup cooked mashed pumpkin and 1/4 cup prune puree. Combine 3 tablespoons chopped walnuts and 2 tablespoons extra brown sugar and sprinkle on top of muffins before baking.
