Ingredients

  • 2 tomatoes, seeded and coarsely chopped
  • 1 Lebanese cucumber, coarsely diced
  • zest of 1 lemon and 1 tbsp fresh lemon juice
  • ½ cup fresh coriander leaves
  • salt and pepper, to taste
  • 8 slices wholegrain bread
  • ½ cup low-fat cream cheese spread
  • 4 butter lettuce leaves
  • 120g shaved chicken

Method

  1. To make salsa, combine the tomato, cucumber, zest, lemon juice and coriander in a bowl. Season with salt and pepper.
  2. Spread 4 slices of bread with cream cheese. Top with the butter lettuce, shaved chicken and salsa. Finish with remaining bread slice.
