Ingredients

  • ½ cup rice
  • 2¾ cups milk
  • ¼ cup caster sugar
  • 1 tsp lemon zest
  • ¼ tsp cinnamon
  • pinch nutmeg
  • dried cranberries, chopped, to serve

Method

  1. Place the rice in a sieve and rinse under cold running water.
  2. Place the milk and sugar in a saucepan and bring to boil. Add rice and cook over low heat, stirring occasionally, for about 25–30 minutes or until rice is tender and milk is absorbed.
  3. Stir through zest and cinnamon. Top with nutmeg and cranberries.

HINT: This dish is also good when eaten cold.
