Hawaiian toast

  • Preparation time 5 minutes
  • Cooking time 2 minutes

Ingredients

  • 4 slices wholemeal bread
  • 2 tbsp tomato paste
  • 180g can tuna in springwater, drained
  • ½ small green capsicum, sliced
  • 1/3 cup pineapple pieces, drained
  • ¾ cup grated reduced-fat cheese

Method

  1. Spread bread with tomato paste
  2. Top with tuna, capsicum and pineapple.
  3. Finish with cheese.
  4. Grill under a hot grill for 2 minutes or until cheese is melted and lightly golden.

HINT: Don't overcook or they will end up too crunchy. They can also be served cold in lunch boxes.
