Quick quesadillas

  • Cooking time 3 minutes
  • Serves 2

Ingredients

  • 2 medium tortillas
  • ½ avocado, mashed
  • freshly ground black pepper, to taste
  • ½ tomato, seeded and diced
  • 1 tbsp taco sauce or salsa
  • ¼ cup grated reduced-fat cheese
  • coriander, chopped (optional)

Method

  1. Heat sandwich press.
  2. Spread 1 tortilla with avocado. Season with pepper.
  3. Top with tomato, sauce and cheese. Add coriander, if desired.
  4. Top with second tortilla.
  5. Cook in sandwich press for 2–3 minutes or until cheese is melted. Cut into wedges to serve.

HINT: Leftover Mexican mince can be used to make meaty quesadillas.
