Seafood pizza

  • Preparation time 20 minutes
  • Cooking time 30 minutes
  • Serves 2-4

Ingredients

  • One 30 cm round pizza base, or four 15 cm individual bases
  • 1/3 cup pizza sauce
  • 1 red onion, finely sliced
  • 1 small green capsicum, finely sliced
  • 100 g peeled prawns
  • 100 g scallop meat
  • 150 g mussel meat
  • ½ cup grated low-fat mozzarella cheese
  • chopped parsley

Method

  1. Preheat oven to moderately hot (200°C or 400°F).
  2. Spread pizza sauce over the base, leaving a 2 cm wide gap around the edge.
  3. Scatter onion and capsicum over the base.
  4. Top with prawns, scallops and mussels.
  5. Sprinkle with cheese.
  6. Place pizza on an oven tray (you can slide it directly onto the oven shelf but it can be difficult to remove when cooked).
  7. Bake for 30 minutes or until base is crisp and cheese melted.
  8. Top with chopped parsley.

HINT: You can also use 350 g of prepared marina mix purchased from the supermarket or fish to replace the individual seafood ingredients
